Peanuts intended for consumption are shelled and briefly blanched to release the film. Peanuts are much fattier than any other legume. This peanut flour comes directly from the food processing industry and is the best of the best. Roasted peanut flour is a good source of protein (40%), has a fabulous peanut aroma, and has been roasted to make it easily digestible.
